With game birds off the menu until the autumn now is the time to perfect your game cookery focusing on deer and wild boar.
One excellent way of improving your skills is to learn game butchery and with Hanks Butchery Academy you can learn all you need – and get to do some cooking at the same time.
The academy is based at renowned Harts Barn Cookery School located just outside Ross-on-Wye.
New dates will be added to the website soon to begin in May but vouchers are available now and can be redeemed or they can make an excellent gift. All butchery students also get a branded apron, a butchers knife and a discount voucher for the shop.
A recent venison butchery class focused on butchering a haunch of venison steak which was then cooked in a cider sauce. There was also a venison rack cooked with bitter chocolate and thyme jus plus a beer braised game faggot with caramelised onions.
Tim Hanks of Hanks Meat & Game said:
“Our masterclasses are very good value. Not only do we cover all the butchery aspects but our guests also learn some cooking skills at the same time. I really believe that learning to butcher gives you a deeper understanding of where the meat comes from and enables you to buy different cuts knowing that you can use the bones and trimmings for other dishes.”
One recent guest of a Hanks masterclass was Ben Randall of Beggarbush Gundogs. He said
“It was great to attend the masterclass with my wife to hone our butchery skills and learn new cookery techniques. We were delighted to welcome Tim to our larder at Beggerbush HQ a few weeks back, to give us a masterclass in whole carcass venison butchery. This time it was all about taking those cuts and pairing them with delicious seasonal ingredients. We can’t wait to recreate these recipes at home.
A butchery masterclass with Tim is an excellent gift idea and vouchers can be bought in the shop and online.
