With game birds off the menu until the autumn now is the time to perfect your game cookery focusing on deer and wild boar.

A recent venison butchery class focused on butchering a haunch of venison steak which was then cooked in a cider sauce. There was also a venison rack cooked with bitter chocolate and thyme jus plus a beer braised game faggot with caramelised onions.
